Rick's Grilled/Smoked "Dixie" Chicken

Ingredients:
1 Whole Chicken
Butter Spray (PRODUCT LINK)
Smoking Wood (PRODUCT)


Directions:

Preparation

1.  For a whole chicken, remove the backbone from the bird, and trim off all fat pockets, pin feathers and any excessive skin. Wash well and dry inside and out.

2.  Spread the chicken meat side down and spray butter flavored pan spray over every square inch and liberally season with CHICK SASS.

3.  Turn chicken over meat side up.  Mix (PRODUCT) with softened butter or margarine and spoon under the skin on top of each breast. Massage the mixture over the entire breast and down around the thigh. Repeat the butter spray, seasoning process, including under the wings and on top of the legs as needed.

Cooking

4.  Place the bird spread flat, meat side up on the charcoal grill away from the fire with the breast pointed towards the heat source.

5.  Cook at approximately 250 degrees until the internal temperature in the middle of the breast reaches 165 degrees to 175 degrees, which should take about an hour and fifteen minutes.

6.  After removing the chicken from the grill, cover with a foil tent and let it rest for at least ten minutes before carving.

Tips
